Description

Indulgent Parisian bakery magic comes alive with homemade Almond Croissants, a delightful pastry that elevates classic French technique. Crisp, buttery layers meet rich almond cream, promising a luxurious breakfast experience you’ll savor with each delicate, golden bite.

Ingredients

Scale

Main Ingredients:

  • 6 croissants
  • 1 cup (96g) almond flour
  • 1/2 cup (113g) unsalted butter
  • 1/2 cup (43g) sliced almonds

Baking and Sweetening Ingredients:

  • 1 cup (113g) powdered sugar
  • 1 tablespoon all-purpose flour
  • 1 large egg
  • 1/4 cup (50g) granulated sugar
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon almond extract

Liquid and Flavoring Ingredients:

  • 1/4 cup (60ml) water
  • 1 tablespoon dark rum, or 1 teaspoon vanilla extract

Instructions

  1. Craft a simple syrup by heating sugar, water, and rum in a small saucepan until sugar completely dissolves, approximately 1-2 minutes. Allow to cool completely.
  2. Prepare the frangipane by whisking almond flour, all-purpose flour, and salt together in a medium mixing bowl.
  3. In a separate large bowl, cream softened butter and powdered sugar until achieving a smooth, uniform consistency.
  4. Incorporate the egg and almond extract into the butter mixture, blending until fully integrated. The mixture might initially appear curdled but will eventually smooth out.
  5. Gently fold the almond flour mixture into the wet ingredients until fully incorporated, creating a cohesive frangipane.
  6. Carefully slice each croissant horizontally, creating top and bottom halves.
  7. Liberally brush or immerse the croissant halves in the cooled simple syrup, ensuring thorough coverage.
  8. Generously spread frangipane on the bottom half of each croissant, then carefully replace the tops.
  9. Apply an additional layer of frangipane across the top of each croissant.
  10. Sprinkle sliced almonds over the surface, gently pressing to secure them in place.
  11. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or silicone mat.
  12. Bake the croissants for 20 minutes, or until the almonds turn golden and the frangipane develops a light brown color.
  13. Remove from the oven and allow to cool slightly. Dust with powdered sugar before serving warm or at room temperature.

Notes

  • Ensure croissants are day-old or slightly stale for better syrup absorption and richer texture.
  • Use high-quality almond extract to enhance the nutty flavor profile significantly.
  • For gluten-free option, substitute all-purpose flour with almond flour or gluten-free blend in frangipane.
  • Toast sliced almonds briefly before sprinkling to deepen their roasted, aromatic characteristics.
