Sweet chocolate covered strawberry cookies bring classic dessert flavors into a delightful baked treat. Luscious strawberry chunks and rich chocolate chips create irresistible cookie perfection you’ll crave with every delectable bite.

Ingredients

Scale

Cookies:

  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter
  • 2 large eggs
  • 1 tsp vanilla extract

Strawberry Elements:

  • 1/2 cup freeze-dried strawberries
  • 1/4 cup strawberry jam
  • 1/2 cup chopped fresh strawberries

Chocolate Coating:

  • 1 cup semi-sweet chocolate chips
  • 2 tbsp heavy cream
  • 1 tbsp coconut oil
  • 1/4 cup white chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Sift together flour and cocoa powder in a medium mixing bowl, ensuring a smooth, lump-free blend.
  3. Cream butter with granulated and brown sugars until light and fluffy using an electric mixer.
  4. Incorporate eggs one at a time into the butter mixture, then mix in vanilla extract until well combined.
  5. Gradually fold dry ingredients into the wet mixture, creating a rich chocolate cookie dough.
  6. Crush freeze-dried strawberries into fine powder and gently fold into the dough.
  7. Dice fresh strawberries into small, uniform pieces and carefully mix into the cookie dough.
  8. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
  9. Bake for 10-12 minutes until edges are set and centers appear slightly soft.
  10. Remove from oven and let cookies cool completely on a wire rack.
  11. Spread a thin layer of strawberry jam on the center of each cooled cookie.
  12. Melt semi-sweet chocolate chips with heavy cream and coconut oil in a double boiler until smooth.
  13. Dip each cookie partially into the melted chocolate, allowing excess to drip off.
  14. Optional: Drizzle melted white chocolate over the chocolate-coated cookies for extra decoration.
  15. Refrigerate cookies for 15 minutes to set the chocolate coating.
  16. Store in an airtight container at room temperature for up to 3 days.

Notes

  • Always sift cocoa powder and flour together to prevent lumpy, uneven cookie texture and ensure a smooth, consistent dough.
  • Crush freeze-dried strawberries into ultra-fine powder using a food processor or mortar and pestle for intense, concentrated strawberry flavor without adding excess moisture.
  • Pat fresh strawberry pieces dry with paper towels before adding to dough to prevent soggy cookies and maintain optimal texture.
  • Use room temperature ingredients like eggs and butter to help them blend seamlessly and create a more uniform cookie batter.
