Description

Warm spices dance through this delightful Cinnamon Apple Teacake, inviting comfort with each tender crumb. Home bakers will discover a simple yet elegant dessert that promises pure joy with sweet apple chunks nestled in a buttery, fragrant slice.

Ingredients

Scale

Main Ingredients:

  • 600 grams (1.2 pounds) Granny Smith apples, peeled and cored
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 cup canola or vegetable oil

Spices and Flavor Enhancers:

  • 2 1/2 teaspoons cinnamon powder
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt

Wet Ingredients and Glaze:

  • 8 tablespoons (120 grams) unsalted butter, melted
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1 1/2 tablespoons apricot jam
  • 1 tablespoon water

Instructions

  1. Heat the oven to 180°C/350°F and prepare a 20cm springform pan with grease and parchment paper.
  2. Dice half the apples into small cubes and create thin slices with the remaining apples.
  3. Separately coat the chopped and sliced apples with butter, sugar, and cinnamon in individual bowls.
  4. Sift flour, baking powder, and salt into a mixing bowl. In another container, thoroughly blend melted butter, oil, eggs, sugar, and vanilla.
  5. Gently fold the wet ingredients into the dry mixture, carefully incorporating the diced apple pieces.
  6. Transfer the batter into the prepared pan, then artfully arrange the apple slices in an overlapping circular pattern across the top.
  7. Bake for approximately 50 minutes, monitoring until a skewer emerges clean when inserted into the center. If apple slices darken too quickly, cover with aluminum foil.
  8. Optional glaze: Warm jam with a splash of water and delicately brush over the cake’s surface for a lustrous finish.
  9. Allow the teacake to cool for a minimum of 30 minutes before cutting and serving, ensuring clean and neat slices.

Notes

  • Slice apples uniformly to ensure even cooking and consistent texture throughout the cake.
  • Use room temperature ingredients like eggs and butter to help them blend smoothly and create a more tender crumb.
  • For a gluten-free version, swap regular flour with a one-to-one gluten-free flour blend and add an extra egg for binding.
  • Experiment with different jam varieties or skip the glaze for a less sweet finish that highlights the natural apple flavors.
