  • 1 1/2 cups (360 milliliters) heavy cream
  • 2/3 cup (65 grams) grated parmesan
  • 2 tablespoons (8 grams) fresh parsley, minced
  • Juice of 2 lemon wedges

Instructions

  1. Heat the oven to 425°F. Massage potatoes with olive oil and generously sprinkle sea salt. Place on parchment-lined baking sheet and roast for 50-60 minutes until fork-tender.
  2. Prepare steak by trimming excess fat and slicing into bite-sized chunks. Coat with avocado oil and cajun seasoning.
  3. Heat cast iron skillet on medium-high. Sear steak pieces undisturbed for 2 minutes until golden brown. Flip and cook for additional minute, then reduce heat and cook one more minute.
  4. Create garlic butter by adding butter and minced garlic to skillet. Sauté until aromatic. Toss steak in garlic butter mixture, then transfer to a covered bowl.
  5. In same skillet, develop cream sauce by whisking heavy cream. Simmer 3-5 minutes until thickened. Incorporate red pepper flakes, parmesan, salt, and pepper. Finish with fresh parsley and lemon juice.
  6. Remove potatoes from oven and gently drop from height to create fluffy interior. Split open, fluff with fork, and add butter if desired. Top with seared steak bites and drizzle with creamy parmesan sauce. Serve immediately while hot.
