Ingredients
Scale
Main Ingredients:
- 5 cups (600g) flour
- 3 potatoes, boiled and mashed
- 1 cup (200ml) warm milk
- 1 cup (200ml) warm water
Leavening and Seasoning Ingredients:
- 1 packet (10g) dry yeast
- 1 teaspoon (8g) salt
- 1 teaspoon (10g) sugar
- 1/2 tablespoon tomato paste
- Black pepper, to taste
- Ground red pepper, to taste
Liquid and Flavor Ingredients:
- 1 tea glass (100ml) oil
- 1/2 tea glass (50ml) oil
- 1 onion, finely chopped
- 1 egg yolk
- 1 teaspoon of oil
- Salt, to taste
Instructions
- Activate the yeast by whisking sugar, dry yeast, warm milk, and water in a spacious mixing bowl. Allow the mixture to rest for 10 minutes until it becomes bubbly and fragrant.
- Incorporate oil, flour, and salt into the activated yeast mixture. Knead the dough thoroughly for 10 minutes until achieving a smooth, cohesive texture that springs back when pressed.
- Cover the dough with a clean kitchen towel and let it rest in a draft-free, warm environment for approximately 1 hour, or until the volume doubles.
- Meanwhile, prepare the potato filling by sautéing onions in oil until translucent and softened. Fold in mashed potatoes, tomato paste, black pepper, ground red pepper, and salt. Cook for an additional 3-4 minutes, then set aside to cool completely.
- Preheat the oven to 180°C (350°F) and lightly grease a baking sheet.
- Deflate the risen dough and divide into two equal portions. Roll each piece into a rectangular shape approximately 1/2 inch thick.
- Distribute the cooled potato filling evenly across one dough rectangle, maintaining a small border around the edges. Carefully place the second dough rectangle on top and firmly seal the perimeter.
- Transfer the assembled bread to the prepared baking sheet. Whisk egg yolk with oil and generously brush over the surface to create a golden, glossy finish.
- Bake for 30-35 minutes until the bread develops a rich, amber-brown color and sounds hollow when tapped.
- Remove from the oven and allow the bread to cool for 10-15 minutes before slicing. Serve warm and enjoy the aromatic, hearty potato bread.
Notes
- Ensure yeast is fresh and active by checking the frothy reaction during proofing to guarantee perfect bread rise.
- Knead dough thoroughly to develop gluten, creating a softer and more elastic bread texture with better structure.
- Room temperature ingredients help activate yeast more effectively and promote smoother dough consistency.
- For gluten-free version, substitute wheat flour with a blend of gluten-free flour like almond, rice, and potato starch to maintain similar bread texture.
