  • 1 tea glass (100ml) oil
  • 1/2 tea glass (50ml) oil
  • 1 onion, finely chopped
  • 1 egg yolk
  • 1 teaspoon of oil
  • Salt, to taste

Instructions

  1. Activate the yeast by whisking sugar, dry yeast, warm milk, and water in a spacious mixing bowl. Allow the mixture to rest for 10 minutes until it becomes bubbly and fragrant.
  2. Incorporate oil, flour, and salt into the activated yeast mixture. Knead the dough thoroughly for 10 minutes until achieving a smooth, cohesive texture that springs back when pressed.
  3. Cover the dough with a clean kitchen towel and let it rest in a draft-free, warm environment for approximately 1 hour, or until the volume doubles.
  4. Meanwhile, prepare the potato filling by sautéing onions in oil until translucent and softened. Fold in mashed potatoes, tomato paste, black pepper, ground red pepper, and salt. Cook for an additional 3-4 minutes, then set aside to cool completely.
  5. Preheat the oven to 180°C (350°F) and lightly grease a baking sheet.
  6. Deflate the risen dough and divide into two equal portions. Roll each piece into a rectangular shape approximately 1/2 inch thick.
  7. Distribute the cooled potato filling evenly across one dough rectangle, maintaining a small border around the edges. Carefully place the second dough rectangle on top and firmly seal the perimeter.
