- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 10 cherry tomatoes, halved
- 1 handful of young spinach
- Green onion, chopped
- Fresh parsley, chopped
- Dill, chopped
Binding and Liquid Ingredients:
- 2 eggs
- 100 milliliters (3.4 fluid ounces) milk
- 6 tablespoons oatmeal
- 50 grams (1.8 ounces) flour
- 2 tablespoons soy sauce
Seasonings and Oils:
- Olive oil
- Salt to taste
- Black pepper to taste
- Paprika to taste
Instructions
- Prepare vegetables by grating zucchini, potatoes, and carrot using a fine grater. Finely chop onions, green onions, dill, and parsley. Mince garlic and halve cherry tomatoes.
- Create batter by whisking eggs and milk in a large mixing bowl. Incorporate oatmeal, flour, and soy sauce until smooth. Add grated and chopped vegetables, including young spinach. Season with paprika, black pepper, and salt to enhance flavors.
- Divide mixture into 8 equal portions. Shape each portion into a ball on a flour-dusted surface. Allow dough to rest, covered with a kitchen towel, for 20 minutes to develop texture.
- Preheat oven to 200°C. Roll each dough ball into a thin rectangular shape. Spread vegetable mixture evenly across dough, leaving a small margin around edges. Tightly roll from one end to create a log, ensuring edges are sealed.
- Prepare baking tray by lightly coating with olive oil or lining with parchment paper. Arrange rolls carefully on the tray. Brush tops with additional olive oil to promote golden browning.
- Bake for 35 minutes until rolls turn golden brown and are thoroughly cooked. Crispy exterior should indicate complete preparation.
- While rolls bake, prepare complementary sauce by mixing yogurt, chopped dill, diced tomato, mustard, minced garlic, salt, and black pepper in a small bowl.
- Remove rolls from oven and allow slight cooling. Slice and serve warm, accompanied by the prepared yogurt sauce. Ideal as a light meal or appetizer with optional side salad.
Notes
- Squeeze excess moisture from grated vegetables to prevent soggy rolls and ensure a crisp texture.
- Customize the filling with additional vegetables like bell peppers or mushrooms for extra flavor and nutrition.
- Experiment with different cheeses or herbs to create unique variations of the recipe.
- Prep the dough in advance and freeze unbaked rolls for convenient future meals.
