Instructions

  1. Prepare vegetables by grating zucchini, potatoes, and carrot using a fine grater. Finely chop onions, green onions, dill, and parsley. Mince garlic and halve cherry tomatoes.
  2. Create batter by whisking eggs and milk in a large mixing bowl. Incorporate oatmeal, flour, and soy sauce until smooth. Add grated and chopped vegetables, including young spinach. Season with paprika, black pepper, and salt to enhance flavors.
  3. Divide mixture into 8 equal portions. Shape each portion into a ball on a flour-dusted surface. Allow dough to rest, covered with a kitchen towel, for 20 minutes to develop texture.
  4. Preheat oven to 200°C. Roll each dough ball into a thin rectangular shape. Spread vegetable mixture evenly across dough, leaving a small margin around edges. Tightly roll from one end to create a log, ensuring edges are sealed.
  5. Prepare baking tray by lightly coating with olive oil or lining with parchment paper. Arrange rolls carefully on the tray. Brush tops with additional olive oil to promote golden browning.
