Description

Gordon Ramsay’s Shepherd’s Pie blends hearty ground lamb with rich, creamy mashed potatoes in a comforting classic. Savory layers of flavor and tender meat promise a satisfying meal that brings warmth to your dinner table.

Ingredients

Scale

Meat:

  • 1.5 pounds (680 grams) ground lamb

Vegetables:

  • 1 large onion
  • 2 cloves garlic
  • 2 carrots
  • 2 celery stalks

Herbs and Seasonings:

  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 tablespoon tomato paste
  • 1 cup beef or chicken stock
  • 1/2 cup red wine
  • Salt
  • Black pepper

Potatoes:

  • 2 pounds (907 grams) russet or Yukon gold potatoes
  • 1/2 cup milk
  • 4 tablespoons butter

Cheese and Optional Topping:

  • 1/2 cup grated cheddar cheese
  • 2 tablespoons fresh parsley (for garnish)

Instructions

  1. Boil potatoes in salted water for 15-20 minutes until tender, then drain and return to pot.
  2. Incorporate butter and milk into potatoes, mashing until smooth and creamy. Season with salt and pepper.
  3. Heat olive oil in a large skillet over medium heat, sauté onions, garlic, carrots, and celery until softened, about 5-7 minutes.
  4. Add ground lamb to the skillet, breaking meat apart and cooking until browned, approximately 5 minutes.
  5. Mix in tomato paste, Worcestershire sauce, rosemary, and thyme. Cook for one minute, then pour in stock and simmer for 10 minutes.
  6. Stir in frozen peas and combine thoroughly with meat mixture.
  7. Preheat oven to 400°F (200°C). Transfer meat mixture to baking dish, creating an even base layer.
  8. Spread mashed potatoes over meat, smoothing surface with spatula. Create decorative fork lines if desired.
  9. Optional: Sprinkle shredded cheddar cheese on top for extra richness.
  10. Bake for 25-30 minutes until golden brown and bubbling.
  11. Remove from oven, let rest briefly, then garnish with freshly chopped parsley before serving.

Notes

  • Use starchy potatoes like Russet or Yukon Gold for the creamiest, fluffiest mashed potato topping that will hold its shape perfectly during baking.
  • Consider using a mix of ground lamb and beef for a more complex, rich flavor profile that balances traditional shepherd’s pie ingredients.
  • Enhance the meat mixture’s depth by adding a splash of red wine or a tablespoon of tomato paste for deeper umami and caramelized notes.
  • For a gluten-free version, replace Worcestershire sauce with tamari or coconut aminos, and ensure all other ingredients are certified gluten-free.
