Description

Comforting Italian classic Traditional Lasagna Soup delivers rich layers of flavor in a hearty bowl. Melted cheese, savory ground beef, and aromatic herbs blend perfectly for a soul-warming meal you’ll crave again and again.

Ingredients

Scale

Pasta:

  • 8 oz lasagna noodles, broken into pieces

Meat and Cheese:

  • 1 lb ground beef
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese
  • 1/2 cup parmesan cheese

Vegetables and Seasonings:

  • 1 medium onion
  • 3 cloves garlic
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 tbsp italian seasoning
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Herbs and Garnish:

  • 1/4 cup fresh basil leaves
  • 2 tbsp fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat, sauté diced onions until translucent and slightly golden, about 3-4 minutes.
  2. Add minced garlic and ground beef, breaking meat into small crumbles while cooking until beef is completely browned and no pink remains, approximately 6-7 minutes.
  3. Pour in diced tomatoes, chicken broth, italian seasoning, dried basil, salt, and black pepper, stirring to combine all ingredients thoroughly.
  4. Bring the soup mixture to a rolling boil, then reduce heat to medium-low and simmer uncovered for 10-12 minutes, allowing flavors to meld together.
  5. Drop broken lasagna noodle pieces directly into the simmering soup, cook until pasta is tender and al dente, roughly 8-9 minutes.
  6. Remove pot from heat and gently fold in ricotta cheese, creating a creamy texture throughout the soup.
  7. Ladle soup into serving bowls, generously sprinkle with mozzarella and parmesan cheese, allowing residual heat to slightly melt the cheeses.
  8. Garnish with freshly chopped basil and parsley leaves, creating a vibrant and aromatic finish.
  9. Serve immediately while hot, ensuring each bowl has a perfect balance of pasta, meat, and melted cheeses.

Notes

  • Use lean ground beef or ground turkey for a healthier protein option that reduces overall fat content without compromising flavor.
  • Break lasagna noodles into smaller, bite-sized pieces before adding to ensure easier eating and more consistent texture throughout the soup.
  • Keep extra broth nearby when cooking, as pasta can absorb liquid quickly and you might need to adjust consistency during simmering.
  • For gluten-free variation, substitute traditional lasagna noodles with gluten-free pasta or zucchini noodles to accommodate dietary restrictions.
