Description

Comfort meets elegance in this hearty turkey and ham pie, combining classic British flavors with rustic charm. Savory layers of tender meats, rich gravy, and buttery pastry promise a satisfying meal that brings warmth to your table.

Ingredients

Scale

Protein:

  • 450 grams (1 pound) cooked turkey, shredded
  • 300 grams (10.5 ounces) cooked ham, shredded

Vegetables and Aromatics:

  • 1 onion, finely chopped
  • 2 leeks, trimmed and sliced
  • 2 garlic cloves, crushed
  • 1 small handful fresh parsley, chopped

Liquid and Binding Ingredients:

  • 25 grams (1 ounce) butter
  • 2 teaspoons Dijon mustard
  • 2 tablespoons plain flour
  • 100 milliliters (3.4 fluid ounces) dry white wine
  • 300 milliliters (10.1 fluid ounces) chicken stock
  • 100 milliliters (3.4 fluid ounces) double cream

Pastry:

  • 320 grams (11.3 ounces) puff pastry sheet
  • 1 egg, beaten

Instructions

  1. Gently caramelize chopped onions and sliced leeks in melted butter over medium heat until translucent and softened, approximately 5-7 minutes.
  2. Introduce minced garlic, Dijon mustard, and flour to the vegetable mixture, stirring continuously for 1-2 minutes to develop a rich, aromatic base.
  3. Gradually pour in white wine and chicken stock, whisking constantly to prevent lumps and create a smooth, velvety sauce. Allow the mixture to simmer and reduce until it thickens, about 5 minutes.
  4. Incorporate heavy cream, diced cooked turkey, chopped ham, and fresh parsley into the sauce. Season generously with salt and black pepper, ensuring even distribution of ingredients.
  5. Transfer the savory filling to a deep pie dish, allowing it to cool and slightly set for easier pastry application, approximately 10-15 minutes.
  6. Carefully drape puff pastry over the filling, pressing and crimping the edges to create a tight seal. Use a sharp knife to create decorative venting slits on the pastry surface.
  7. Brush the pastry with beaten egg for a golden, glossy finish. Bake in a preheated oven at 200°C for 30-35 minutes until the crust is puffed, crisp, and rich amber in color, with the filling bubbling underneath.

Notes

  • Swap butter for olive oil to create a lighter version that’s equally delicious and heart-healthy.
  • Experiment with gluten-free flour to make this pie suitable for those with wheat sensitivities.
  • Add a sprinkle of fresh thyme or rosemary for an extra layer of aromatic flavor that elevates the entire dish.
  • Cool the filling completely before adding pastry to prevent soggy bottom and ensure a crisp, flaky crust.
