Description

Delightful turkey roulade brings festive Italian-inspired flavors to your holiday table with elegant rolled perfection. Herbed spinach and creamy cheese nestled inside tender turkey create a memorable main course that will impress guests and satisfy hungry appetites.

Ingredients

Scale

Main Ingredients:

  • 2 turkey tenderloins
  • 1/2 pound sausage (mild or spicy)
  • 1 cup dried cranberries
  • 1/2 cup bread crumbs

Herbs and Seasonings:

  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh sage, chopped
  • Salt and pepper to taste

Additional Ingredients:

  • 2 tablespoons butter, divided
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 large egg, beaten
  • 1 tablespoon olive oil
  • 1/2 cup white wine
  • 1 1/2 cups chicken stock, divided
  • 1 teaspoon Dijon mustard
  • 1 tablespoon cornstarch

Instructions

  1. Warm the oven to 350°F, preparing for a succulent turkey preparation.
  2. Melt butter in a skillet over medium heat. Sauté onions and garlic until translucent, approximately 3-4 minutes. Incorporate sausage, crumbling and cooking until golden brown, then drain excess fat.
  3. Fold bread crumbs, cranberries, herbs, egg, salt, and pepper into the sausage mixture. Combine thoroughly and remove from heat.
  4. Transform turkey tenderloins by butterflying and gently pounding to an even 1/3-inch thickness. Season with salt and pepper. Arrange tenderloins side by side with slight overlap, then evenly distribute stuffing across the surface.
  5. Tightly roll the tenderloins, creating a compact cylinder. Secure the roulade using kitchen string to maintain its shape.
  6. Heat remaining butter and olive oil in an ovenproof pan. Sear the roulade on all sides until beautifully browned, approximately 8-10 minutes.
  7. Pour white wine and chicken stock into the pan. Cover and transfer to the preheated oven, baking for 35-45 minutes. Occasionally baste the roulade and verify internal temperature reaches 160°F.
  8. Once cooked, remove from oven and loosely tent with foil, allowing the meat to rest for 10-15 minutes.
  9. Create a quick pan sauce by whisking remaining chicken stock with cornstarch and Dijon mustard. Stir into roasting pan drippings and simmer until the gravy thickens, about 3-4 minutes.
  10. Slice the roulade into elegant medallions and serve with the aromatic gravy.

Notes

  • Opt for fresh herbs to elevate the flavor profile and add vibrant, aromatic notes to the stuffing mixture.
  • Consider using gluten-free breadcrumbs for a celiac-friendly version of this elegant dish.
  • Ensure the turkey is pounded evenly to guarantee uniform cooking and prevent dry spots in the roulade.
  • Use kitchen twine or toothpicks strategically to keep the stuffing secure and maintain the roulade’s beautiful spiral shape during roasting.
