  • 400 ml (13.5 fluid ounces) water
  • 60g (2.1 ounces) butter
  • 1 teaspoon salt
  • 1 teaspoon coriander
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Thyme and bay leaf to taste

Instructions

  1. Generously coat the meat with salt and black pepper. Heat oil in a large pot over medium-high heat and thoroughly sear the meat until golden brown on all surfaces. Transfer meat to a separate plate.
  2. Using the same pot, sauté chopped celery, minced garlic, diced onions, sliced carrots, and sweet peppers until vegetables become translucent and fragrant, approximately 5-7 minutes.
  3. Carefully reintroduce the seared meat to the pot. Add coriander, vinegar, water, and sugar. Bring the mixture to a vigorous boil, then reduce heat to low and simmer for 1.5-2 hours, allowing the meat to become incredibly tender.
  4. While the meat simmers, place whole potatoes in a separate pot with salted water. Boil at medium-high heat for 15-20 minutes until fork-tender. Drain and set aside.
  5. Once meat is fork-tender, remove it from the cooking liquid. Increase stovetop heat and rapidly reduce the sauce, stirring constantly until it reaches a slightly thickened consistency.
  6. Gently fold the boiled potatoes into the reduced sauce. Sprinkle with fresh thyme and bay leaf. Finish by stirring in cold butter to create a luxurious, glossy sauce.
  7. Slice the meat against the grain into succulent portions. Plate the meat alongside the herbed potatoes and drizzle with the rich, reduced sauce.
