Instructions
- Generously coat the meat with salt and black pepper. Heat oil in a large pot over medium-high heat and thoroughly sear the meat until golden brown on all surfaces. Transfer meat to a separate plate.
- Using the same pot, sauté chopped celery, minced garlic, diced onions, sliced carrots, and sweet peppers until vegetables become translucent and fragrant, approximately 5-7 minutes.
- Carefully reintroduce the seared meat to the pot. Add coriander, vinegar, water, and sugar. Bring the mixture to a vigorous boil, then reduce heat to low and simmer for 1.5-2 hours, allowing the meat to become incredibly tender.
- While the meat simmers, place whole potatoes in a separate pot with salted water. Boil at medium-high heat for 15-20 minutes until fork-tender. Drain and set aside.
