Description

Homemade vegan fish sauce brings Southeast Asian umami magic to plant-based cooking without seafood complexity. Rich fermented flavors mimic traditional fish sauce, offering you a versatile condiment that elevates numerous global dishes with depth and authentic taste.

Ingredients

Scale

Vegan Base:

  • 2 cups water
  • 1/2 cup soy sauce
  • 1/4 cup rice vinegar

Umami Enhancers:

  • 4 sheets nori seaweed
  • 2 tbsp nutritional yeast
  • 1 tsp mushroom powder

Aromatics and Seasoning:

  • 3 cloves garlic
  • 1 inch ginger
  • 2 tbsp tamari
  • 1 tsp black pepper
  • 1 tsp salt

Instructions

  1. Tear nori sheets into small pieces, ensuring they are roughly uniform in size for even flavor distribution.
  2. In a medium saucepan, combine water, soy sauce, rice vinegar, nori pieces, nutritional yeast, and mushroom powder, creating a rich umami base.
  3. Peel and mince garlic and ginger, then add them to the liquid mixture along with tamari, black pepper, and salt.
  4. Place the saucepan over medium-high heat and bring the liquid to a gentle simmer, stirring occasionally to prevent sticking.
  5. Reduce heat to low and let the mixture simmer for 15-20 minutes, allowing the ingredients to infuse and concentrate their flavors.
  6. Remove from heat and let the sauce cool to room temperature, allowing the flavors to meld further.
  7. Strain the sauce through a fine-mesh sieve, pressing on the solids to extract maximum flavor.
  8. Transfer the strained vegan fish sauce to a clean glass jar or bottle for storage.
  9. Refrigerate and use within 2 weeks, shaking well before each use to redistribute any settled ingredients.

Notes

  • Tear nori sheets carefully to ensure uniform flavor distribution throughout the sauce.
  • Use high-quality ingredients like organic soy sauce and fresh garlic for a more robust umami profile.
  • Adjust salt and seasoning levels to match personal taste preferences or dietary restrictions.
  • Strain the sauce multiple times through cheesecloth for an ultra-smooth, professional-grade texture.
