Creamy white chocolate cheesecake promises pure indulgence with its silky smooth texture and rich, luxurious flavor. Elegant dessert lovers will savor each heavenly bite of this classic New York-style treat that melts perfectly on the palate.

Ingredients

Scale

Dairy:

  • 680 g (24 oz) cream cheese
  • 200 ml (6.8 fl oz) heavy cream
  • 120 g (4.2 oz) white chocolate
  • 60 g (2.1 oz) sour cream
  • 30 ml (1 fl oz) milk

Dry Ingredients:

  • 150 g (5.3 oz) granulated sugar
  • 90 g (3.2 oz) all-purpose flour
  • 30 g (1.1 oz) cornstarch

Crust and Finishing:

  • 200 g (7.1 oz) graham cracker crumbs
  • 80 g (2.8 oz) unsalted butter
  • 2 large eggs
  • 10 ml (0.3 fl oz) vanilla extract
  • 5 g (0.2 oz) salt

Instructions

  1. Preheat the oven to 325°F (165°C) and line a 9-inch springform pan with parchment paper.
  2. Melt butter and combine with graham cracker crumbs, pressing the mixture firmly into the bottom of the pan to create an even crust.
  3. Gently melt white chocolate using a double boiler or microwave, stirring until smooth and allowing to cool slightly.
  4. In a large mixing bowl, whip cream cheese until creamy and smooth, gradually incorporating sugar until fully integrated.
  5. Add eggs one at a time, mixing thoroughly after each addition to ensure a uniform texture.
  6. Fold in sour cream, milk, vanilla extract, and melted white chocolate, stirring until the mixture is completely homogeneous.
  7. Sift flour, cornstarch, and salt together, then gently fold into the cream cheese mixture to prevent lumps.
  8. Pour the cheesecake batter over the prepared graham cracker crust, smoothing the top with a spatula.
  9. Bake for 50-60 minutes, or until the edges are set but the center remains slightly jiggly.
  10. Remove from oven and allow to cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight to set completely.
  11. Before serving, run a knife around the edges of the pan to loosen the cheesecake and remove the springform sides.

Notes

  • Prevent Cracks: Avoid overmixing the batter and overbaking to keep the cheesecake smooth and crack-free.
  • Water Bath Alternative: Place a pan of hot water on the bottom rack of the oven to create moisture and prevent surface cracking.
  • Gluten-Free Option: Substitute graham cracker crumbs with gluten-free cookies or almond meal for a celiac-friendly crust.
  • Make-Ahead Friendly: This cheesecake can be prepared up to 3 days in advance, making it perfect for entertaining or meal planning.
