  • 70 g (2.5 ounces / 6 tablespoons) corn starch
  • 50 g (1.7 ounces / 4 tablespoons) corn starch
  • 150 ml (5 ounces / 0.7 cups) water
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 pinch of salt

Instructions

  1. Craft a silky cherry jam by simmering cherries with corn starch, sugar, and water in a saucepan until the mixture thickens. Remove from heat and allow to cool completely.
  2. Whisk egg yolks with salt and powdered sugar until smooth and pale. Gently fold in melted butter and vanilla. Gradually incorporate flour and baking powder to create a soft dough. Place a small portion of the dough in the freezer for 15 minutes.
  3. Create the yogurt cream by blending Greek yogurt with corn starch and vanilla extract. In a separate bowl, whip egg whites with salt and sugar until forming stiff, glossy peaks. Delicately fold the egg whites into the yogurt mixture.
  4. Preheat the oven to 180°C (350°F). Line a 20 cm baking pan with parchment paper. Distribute two-thirds of the dough evenly across the bottom of the pan. Spread the cooled cherry jam over the dough layer, then carefully pour the yogurt cream on top.
  5. Remove the chilled dough from the freezer and grate it generously over the yogurt cream layer, creating a delicate, textured topping.
  6. Bake in the preheated oven for 40 minutes, or until the surface turns golden brown and a toothpick inserted in the center comes out clean. Allow the cake to cool completely before serving.
